    Ingredients

    • Seasonings: Salt, black pepper, garlic powder, onion powder, paprika, and Italian seasoning.  If you like a little bit of spicy kick to it, you could also add a pinch of cayenne pepper or chili powder.
    • Chicken breasts: Use boneless skinless chicken breast for this recipe. Use thick breasts and cut them in half (butterfly).
    • Strips of bacon: Use a natural bacon that is free from nitrates. I prefer to use thin-cut bacon so it cooks perfectly for this recipe but I believe you could also use thick-cut bacon (you might need to increase the cooking time a little bit).
    • Maple syrup and dijon mustard: This simple glaze adds a wonderful sweet and tangy flavor to the finished dish.

Can you make it ahead of time?

These baked bacon wrapped chicken breasts are best served as soon as they are cooked so that the chicken is nice and tender and the bacon is crispy. If you do have leftovers, they can be stored covered in an airtight container in the fridge for 3 to 4 days and reheated in the oven at 360F for 10 to 15 minutes to warm through. You can season and wrap the chicken up to 24 hours ahead of time and store them in the fridge till you are ready to cook them.

Can you make it with chicken thighs?

It’s best to make this recipe with chicken breasts as their shape makes them easier to wrap. You can roll the thighs and then wrap the chicken with the bacon, but be aware that they will take longer to cook through.
