Paleo Banana Coconut Blondies

Bananas and coconut are the star of these blondies! Coconut flour tends to absorb a lot of moisture and creates just the right consistency for the perfect banana blondies. They were so beyond good, guys.  These rich, moist, and delicious blondies will leave you speechless! Chewy, gooey, and absolutely delicious! I absolutely love how indulgent this treat is while tasting so decadent.

I also love how moist they are, just like real banana bread but in the form of blondies.

These Paleo Banana Coconut Blondies are the perfect treat after lunch, dinner or for the lunch box. The lunch box is not complete without a sweet little treat. Switch it up this week with these good-for-you banana coconut blondies! A delightful treat that tastes so delicious and is made with simple ingredients! This is an easy recipe you’ll come back to again and again. (You can leave out the chocolate chunks and chocolate ganache. You can add chopped walnuts instead.)

Paleo Banana Coconut Blondies

How To Make Paleo Banana Coconut Blondies

What you need

2 ripe bananas, mashed

3/4 cup  coconut sugar (If using honey, add only 1/4 cup coconut oil instead of 1/3 cup)

2 large eggs

1/3 cup coconut flour

1/4 cup oat flour (I grounded gluten free oats)

1/3 cup melted coconut oil, cooled (use only 1/4 cup, if using honey instead of coconut sugar)

1/2 tsp pure vanilla extract

1  tsp baking powder

1/4 tsp salt

1/2 cup chocolate chips or chopped dark chocolate chunks

Chocolate Drizzle

1 Tbsp chocolate chips or chopped dark chocolate chunks

1/2 Tbsp melted coconut oil

Instructions

Preheat oven to 375 F. In a medium mixing bowl, mix bananas, coconut sugar, and eggs with a mixer on medium speed until well combined. It’s okay if there are some banana chunks.

Add coconut flour, oat flour, coconut oil, vanilla extract, baking powder and salt to the mixing bowl and mix well (on low speed, if using the mixer).

Fold in dark chocolate chunks. If you don’t like chocolate or want to avoid using chocolate, you can just omit it, or add instead nuts of your choice (like chopped walnuts or pecans). It will turn out great that way too!

Spread mixture in a 8 x 8 baking dish and bake in a preheated 375 F oven for 25 minutes.

Place the baking dish on a cooling rack and let brownies stand for 5 minutes before cutting.

Melt chocolate chips/chunks in a glass bowl over a pan with boiling water. Drizzle some melted chocolate on top of already cut brownies and enjoy! It is hard to eat only one brownie. 🙂
