They are made with clean ingredients and are so easy to make. I have made them countless times in my kitchen over the past few years. My kids and family love them, and I am so happy to finally share the recipe with you today. The perfect easy snack to have on hand!

Ingredients and Substitutions

  • Organic unsweetened chocolate – I usually use 100% cacao unsweetener dark chocolate bars but you can use any chocolate you prefer, even chocolate chips. (If it’s sweetened, reduce the amount of maple syrup in the recipe.)
  • Puffed rice – I used organic puffed rice but you could also use organic crispy rice cereal.
  • Peanut butter – It adds creaminess and a rich flavor. I use Costco’s Kirklands brand organic peanut butter made only with peanuts and sea salt. They don’t have any added sugars or oils, and are made with US Valencia peanuts which are better than others. You can also use any nut butter you like like almond butter or cashew butter. You can also omit the peanut butter all together.
  • Maple syrup – you could also use honey instead of maple syrup. If you are using sweetened chocolate, reduce the amount of sweetener.
  • Coconut oil – it helps everything to meld together beautifully and makes the mixture less crumbly. It could be omitted but you may have to add a little bit more peanut butter if necessary.
  • Vanilla extract – adds a nice flavor

How to Make Chocolate Crunch Bars

  1. Prepare the dish. Line a 9 x 13-inch baking dish or deep baking tray with parchment paper. Set it aside.
  2. Melt the chocolate. Melt 8 oz of unsweetened chocolate in a heatproof bowl over a little bit of simmering water (double boiler method) on low heat. Stir continuously to prevent burning.
  3. Mix it all together. In a large mixing bowl, combine 3 cups of rice puffs, 1 cup peanut butter, 1/2 cup maple syrup, 1/4 cup coconut oil, and 1 tsp vanilla extract. Pour the melted chocolate over the mixture and stir until everything is well combined. Taste the mixture and add more maple syrup if desired.
  4. Chill. Pour the chocolate mixture into the prepared baking dish. Spread it out evenly and press down firmly with a spatula. Place it in the freezer for about an hour, or until firm.
  5. Cut into bars and enjoy. Once firm, remove the dish from the freezer. Lift the parchment paper out of the dish and place it on a cutting board. Cut the mixture into bars of your desired size. Store the bars in the fridge or freezer. Enjoy!
