Heat oil in a skillet over medium heat. Pour the whisked eggs into the pan. Cover and cook until the edges have set. 

 INSTRUCTIONS

Add the shredded cheese and ham to one side of the omelet. Turn off the heat and add avocado and season. Fold the omelet over the cheese and ham  Remove from the pan and serve with parsley.
