Scrambled Eggs Recipe Ingredients
The key to making perfect scrambled eggs starts with using good quality eggs. The type of egg doesn’t matter as much as the age of the eggs. The fresher the eggs are, the better your scrambled eggs will taste. That being said, here are some tips on how to tell if eggs are fresh.
How to tell if eggs are fresh
Fill a mixing bowl or large saucepan 2/3rds full with water. One at a time, place the eggs into the water. If an egg is perfectly fresh, it will fall to the bottom and stay on its side. If it is nearing its expiration date for use, it will stand up in the water. Eggs that are spoiled or unsafe to use will float to the top of the water and should be discarded.
Now that you have assured that your eggs are fresh, let’s talk about how to scramble eggs.
How to make scrambled eggs
- Heat oil and butter in a skillet over medium-high heat.
- Crack eggs in a small mixing bowl. Whisk them with a whisk or a fork until blended.
- Pour eggs in the skillet when it is hot. Gently fold and push the eggs across the pan with a silicone or rubber spatula, forming large soft curds. Continue pulling and folding eggs until there is no visible liquid. Remove the pan from the heat source while the eggs are still glossy looking. You don’t want to overcook the scrambled eggs, or you might end up with tough and rubbery eggs.
- Serve while still warm. Season with salt, black pepper, cumin or paprika. Top with your favorie toppings.
Do You Have To Add Milk
No. If you add milk (or water) to the eggs, you will dilute the flavor of the eggs, and it will take a little bit longer to cook them which may result in drier eggs. Not only that, but the addition of milk also makes them rubbery, colorless and less flavorful.
Scrambled Eggs Variations
You can add to your eggs chives and other fresh herbs, spinach, mushrooms, onions, cheese, or crumbled bacon and you can also season them with salt, thyme, cumin or paprika.
Serving Suggestions
You can serve these fluffy scrambled eggs with:
- Some fruit and vegetables: berries, kiwis, avocado slices, sliced cherry tomatoes
- With meat: Oven baked bacon, chorizo, or breakfast sausages
- Fold them in breakfast burritos or breakfast tacos.
TIPS FROM NELI’S KITCHEN
Recipe Notes and Tips for Making The Best Scrambled Eggs
- Crack and whisk in a separate bowl. For a well-whisked egg, crack them in a separate bowl instead of directly in the skillet and whisk them vigorously until the eggs whites and yolks are thoroughly blended. Otherwise, you will end up with a streaky scramble.
- Don’t add milk or water. Adding liquid dilutes the flavor of the eggs, creates steam and can result in dry scrambled eggs.
- Use quality cookware. To avoid scrambled eggs from sticking to the pan, use non-stick cookware and silicone spatula.
- Use butter. It adds some flavor to the eggs without diluting the eggs.
- Don’t cook over high heat. When you make scrambled eggs too quickly over high heat, they can become tough and rubbery. Cook scrambled eggs over medium-low heat (for soft & creamy eggs) or medium-high heat (for the most perfectly fluffy scrambled eggs).
- Don’t add salt to eggs until they are cooked. Salt draws out moisture, so if you add it in the beginning, it may dry out your eggs.
- Movement is important. After the eggs have been placed into the pan, allow them to set slightly around the edges. Then, use a non-stick spatula to gently and slowly push and turn the eggs over as they cook. If you don’t move the eggs around as they cook, your scrambled eggs might brown or overcook.
- Allow for carryover cooking. Remove the pan from the heat source while the eggs are still slightly undercooked and glossy looking. The pan will remain hot for a couple more minutes, allowing the eggs to finish cooking off of the heat source. This is known as carryover cooking.
