Ingredients
- Large eggs: Eggs are whisked together and quickly scrambled for the filling in this burrito.
- Seasonings: Smoked paprika, salt, black pepper, and lime juice.
- Ground sausage: I love to use ground sausage, breakfast sausage, chorizo or Italian sausage. Remove the meat from the casings before browning in the skillet.
- Cheese: I love to add shredded Monterey Jack cheese to these, but cheddar cheese and most shredded cheeses will work well.
- Tortillas: Use 10 inch flour tortillas in this recipe.
- Veggies: Avocado, tomato and onion.
How to make a breakfast burrito
- Heat oil in a skillet over medium high heat and pour the eggs and scramble them. Divided the scrambled eggs between 4 tortillas, and place them in the middle. Season the eggs with smoked paprika and salt.
- Add ground sausage to the skillet and cook it over medium high heat while breaking it up with a spatula. Divide the sausage between the tortillas.
- Divide chopped tomatoes and onions between the 4 tortillas.
- Top each tortilla filling with shredded cheese, diced avocado and a drizzle of some lime juice.
- Roll tortillas by folding the sides of the tortilla and rolling the tortilla into a burrito.
- Heat oil over medium heat in the skillet and brown each burrito on each side.
- Serve warm or pack for on the go breakfast.
Can you make them ahead of time?
I wouldn’t make these too far ahead of time as the avocado will start to brown and the tomatoes can start to make the tortilla soggy. You can definitely make them in the morning and enjoy for lunch, or make them the night before and keep refrigerated for the next day.
If you like to meal prep, you can cook the eggs and the sausage and store them in the fridge for up to 4 days, then it won’t take you long to make up the burritos in the morning.
Freeze Breakfast Burrito
If you want to freeze them, omit the avocado, tomato and onion. Fold them with sausage, egg, and cheese, and wrap the burritos in a parchment paper and aluminum foil, and then in a freezer bag. Store the frozen burrito in the freezer for up to 3 months for best flavor. Thaw individual burritos overnight in the fridge. In the morning, you can lightly reheat them in a skillet with butter over medium heat. You can also reheat them in a microwave or a toaster oven.
What are the best tortillas to use?
Flour tortillas are best to use for burritos as they are more pliable and easier to roll and hold together. Use the large 10 inch wraps so that they hold the fillings in securely. If you are making them as a to-go breakfast, wrap them in foil to make sure that everything holds together.
What else can you add to these?
It’s easy to make these breakfast burritos your own! Swap the sausage for bacon if you prefer, or add in other veggies like bell peppers, green onions, black beans or mushrooms. If you like things spicy, add in a little sriracha mayo, hot sauce or salsa to liven things up!
What to serve them with
You can serve these breakfast burritos with hash browns (or roasted potatoes), fruit salad or platter, and guacamole for a full breakfast or brunch.

Recipe Notes and Tips
- Use large 10 inch flour tortillas for this recipe.
- If you are having trouble rolling the burritos, you can use toothpicks to hold the tortilla in place.
- Once rolled, I like to brown the burritos in the skillet for extra crunch, but you can eat them without doing this step.

Ingredients
- 4 large eggs, whisked
- ¼ teaspoon smoked paprika

- ½ lb ground sausage, such as chorizo, Italian, or anything you like, removed from casings
- 1 cups shredded Monterey Jack cheese
- 4 10-in burrito-size flour tortillas

- 1 avocado, diced
- ½ cup diced & seeded tomato
- 1 small onion, finely diced
- 1 lime, quartered
- ½ teaspoon salt
