Sweet Potato Sausage and Egg Breakfast Casserole – a healthy breakfast casserole perfect for a large breakfast or brunch with your whole family.
Sweet Potatoes | Red Bell Pepper Onion | Ground Sausage | Eggs Almond Milk | Thyme | Salt Black Pepper
Cook the sweet potatoes over medium-high heat for 8 minutes. Once they are almost tender add in the onion, bell pepper, salt, and pepper. Cook until vegetables are tender then transfer to a casserole dish. Add sausage to the skillet and cook until brown, be sure to crumble it as it cooks. Add to the casserole dish.
Whisk the eggs, almond milk, and spices together. Pour over the vegetables & sausage mixture in the casserole dish, and stir to combine. Bake, covered with foil, at 375° for 20 minutes. Remove the foil and bake for another 15 minutes. Once done cooking, allow to rest for 5 minutes. Sprinkle the top with green onions and serve.
