Heat oven to 350° and poke holes in the potatoes. Place on a baking pan and bake for 1 hour 15 minutes. Heat oil in a skillet over medium-high heat and cook the onion until softened.
Peel the sweet potatoes and mash until smooth. Add the heavy cream, thyme, salt, and pepper and mix thoroughly. Stir in the onion and bacon. Top it with more bacon and the thyme sprigs.
