Why You’ll Love This Buffalo Chicken Dip

If you’ve ever needed an easy, crowd-pleasing appetizer that disappears faster than you can set it down, this Buffalo Chicken Dip is it. It’s creamy, spicy, and cheesy – like buffalo wings without the mess or the fryer. I’ve made this dip countless times, and it never fails. Using rotisserie chicken keeps it juicy, and it bakes up perfectly melty every single time.

Here’s why I love it (and why you will too):

  • Quick & easy: Ready to bake in under 10 minutes — ideal for game day or last-minute guests.
  • Simple ingredients: Just five pantry staples that deliver big flavor.
  • Keto-friendly: Naturally low-carb, perfect with celery or bell pepper sticks.

Whether it’s for game day, a casual get-together, or the holidays, this dip always disappears fast.

Ingredients (with Helpful Notes)

To make the best buffalo chicken dip recipe, you will need the following ingredients:

  • Rotisserie chicken – I use pulled or shredded chicken. It saves time and gives the dip that tender, juicy texture. Leftover baked chicken or Pressure Cooker shredded chicken breasts.
  • Buffalo sauce: I use Frank’s for that authentic buffalo flavor, but you can use your favorite brand.
  • Cream cheese: I recommend you use softened and cubed cream cheese so it melts evenly. For a lighter dip, you can use reduced-fat cream cheese or Neufchâtel.
  • Ranch dressing: Ranch dressing helps to balance out the flavor of the buffalo sauce. You can swap it for blue cheese dressing if you love that traditional buffalo flavor combo.
  • Cheese: I used a mix of shredded mozzarella & mild cheddar cheese for the perfect stretch and sharpness.
  • Scallions: For a little color and fresh bite on top after baking.

How To Make This Easy Buffalo Chicken Dip

  • Toss the chicken – Add shredded chicken to the baking dish, pour over the buffalo sauce, and toss until every piece is coated.
  • Melt the creaminess – In a saucepan over low heat, melt the cream cheese with ranch dressing until smooth and pourable.
  • Layer & mix – Sprinkle 1 cup of the shredded cheese over the chicken. Pour the warm cream cheese mixture on top, and stir gently to combine everything. Add the remaining cheese over the top
  • Bake & serve hot. – Add the remaining cheese over the top and bake uncovered for 20–30 minutes, until bubbling and golden around the edges. Garnish with chopped scallions and serve immediately.

Make Ahead Tip

You can assemble the buffalo chicken dip up to a day in advance – just cover and refrigerate it unbaked. When ready to serve, let it sit at room temperature for about 20 minutes, then bake as directed until hot and bubbly. Perfect for stress-free entertaining!

TIPS FROM NELI’S KITCHEN

Tips for Perfect Buffalo Chicken Dip

  • Soften your cream cheese — Cold cream cheese won’t melt smoothly, I like to take mine out of the fridge 30 minutes to an hour before I plan to make this 5 ingredient buffalo chicken dip.
  • Don’t overbake — You want melty, not oily. Check it at 20 minutes; when it’s bubbling around the edges, it’s ready.
  • Mix cheeses — A blend of mozzarella (for melt) and cheddar (for flavor) makes a world of difference.

How To Serve

This dip is versatile and goes with just about everything! Try serving it with:

  • Crunchy celery sticks or carrot sticks for a fresh contrast
  • Tortilla chips, pretzel crisps, or crackers for scooping
  • Toasted baguette slices for a heartier bite
  • Or spoon it over baked potatoes, nachos, or even pasta (trust me – it’s next-level comfort food)

For a full game-day spread, pair it with something cool like a Baked BBQ Wings, Crispy Baked Chicken Wings, Creamy Coleslaw, Fresh Veggie Platter with Homemade Ranch or Blue Cheese Dressing.

Storing & Reheating

  • Store: Let the dip cool, then refrigerate in an airtight container for up to 4 days.
  • Reheat: Warm in the oven at 350 F for 10–15 minutes or microwave in short bursts, stirring occasionally until hot.

Make It Your Own

  • Low-carb version: Skip the crackers and serve with bell pepper slices or cucumber rounds.
  • Blue cheese lover? Sprinkle crumbled blue cheese on top before baking.
  • Add-ins: Try diced jalapeños, crumbled bacon, or chopped green chilies for an extra twist.
