    We are now bang in artichoke season, and I’m sharing a really easy way to prepare these wonderful veggies. Artichokes can look daunting, but they are so easy to cook using this method. Cooking artichokes in your Instant Pot is the best way to enjoy this delicious and nutritious vegetable.

    Serve them as a side or alongside your other favorite appetizers like deviled eggs and bacon-wrapped pineapple bites.

    How to cook artichokes in an Instant Pot

    • Prepare the artichokes for cooking by removing the stem and slicing off the top. Use kitchen scissors to snip off the spikey tip of each leaf.
    • Place the steamer rack into the bottom of the instant pot and pour the required amount of water inside. Drop a few lemon slices into the water and place the artichokes, stem side down, onto the rack.
    • Replace the lid and seal it properly. Move the valve to the “sealing” position to prepare for pressure cooking. Cook on High Pressure for 10 minutes and quickly release the pressure when done.
    • Serve the instant pot steamed artichokes immediately with desired toppings.

    How to choose fresh artichokes

    • Choose an artichoke that has tightly packed leaves
    • Choose an artichoke that feels heavy for its size.
    • The artichoke should feel firm and its stem should not easily bend.
    • The artichoke should have a healthy deep green color, with not too much browning
    • Squeeze the artichoke leaves and listen for a “squeak”
    • Avoid artichokes that have opened, dry or split leaves.

    How to store artichokes

    My 3 tips for storing fresh uncooked artichokes:

    • Do not wash before storing
    • Slice off a bit of the artichoke stem, then sprinkle it with a little water, and place it in the fridge in an airtight plastic bag
    • Best to cook within 5 – 7 days of purchase

    How do you eat an artichoke

    Once the artichokes are cool enough to handle, peel a leaf off at a time and use your teeth to scrape off the delicious flesh. When you get to the center, remove the layer of fuzz that surrounds the heart, and use a spoon to scoop it out and discard.

    What do you serve with Instant Pot artichokes?

    My favorite way of enjoying pressure cooker artichokes is to simply top them with a little butter, salt, and lemon juice. They make a great side to accompany your favorite mains. You can also serve them as an appetizer with a dip, my favorite dips are:

    • Melted Herb Butter – ½ cup melted salted butter with ¼ teaspoon dried parsley
    • Balsamic Mayo Dip – ¼ cup real mayonnaise with ¼-½ teaspoon balsamic vinegar
    • Melted Lemon Garlic Butter – ½ cup melted butter, 1 teaspoon lemon, ¼ teaspoon garlic powder

    Recipe Tips

    • The amount of water you need will vary depending on what size Instant Pot you have.
      • The 8 Quart Models need 1.5 cups of liquid.
      • The 6 Quart Models need 1 cup of liquid.
      • The 3 Quart Models need .75 cups of liquid.
    • Do not wash your artichokes until right before you are ready to prepare them. To keep them fresh as long as possible, put a little bit of water on the stem then dab it off before storing in the fridge.
    • Quick release the pressure and remove the lid as soon as you are able to avoid mushy artichokes.
    • Do not slice your artichokes in half until after they are done cooking. Putting them in the pressure cooker in half will likely cause them to overcook.
    • Serve the cooked artichokes with one of the delicious dips above.

    INGREDIENTS

    • Water, The 8 Quart Models need 1.5 cups of liquid.The 6 Quart Models need 1 cup of liquid. The 3 Quart Models need .75 cups of liquid.
    • 3 small lemon slices

    INSTRUCTIONS
