Paleo Almond Butter Brownies

These chocolate Paleo almond butter brownies melt in your mouth and are absolutely delicious! Sweetened with raw honey, no refined sugar. Only 30 minutes.

Ingredients  

Instructions 

  • Preheat oven to 350 F. Grease a 8 x 8 in baking dish.
  • Mix together almond butter, melted coconut oil, honey, egg, vanilla extract in a bowl.
  • In a separate bowl mix almond flour, cacao powder, baking soda and salt.
  • Add dry ingredients to wet ingredients and mix well. Fold in the chocolate chips and chopped walnuts.
  • Spread evenly in the prepared baking dish and bake at 350 F for about 30 - 35 minutes.
  • Cool completely for about 15 minutes, and then cut in 16 squares.

    I’m a little disappointed that these brownies turned out dry, flat and not soft and chewy as I was expecting. I used coconut sugar in place of honey, however per the comments, it was said it wouldn’t affect the brownies. Though the flavor was good, I’m not sure I’ll make them again 🙄.

      Are you sure you didn’t leave out or replace anything else? With almost 1 cup of almond butter & coconut oil combined and an egg, I just don’t see how these brownies would turn out dry. Did you use almond flour or coconut flour (that alone can make a huge difference)! Yes, i have made it with both coconut sugar and honey, and they turn out great every time. Hope you give it a try again, I am sure you will love them. 🙂

    This is a fantastic recipe! Gluten free and sweetened with honey. Exactly the type of recipe I need.     Allergy to honey. Would maple syrup work just as well? Or agave?

      I have not tried this recipe with maple syrup. I think it would still taste great but because maple syrup is a little bit more runny than honey, I am not sure how the texture will be.

    Hi there! This recipe looks amazing and I can’t wait to try it!!! One question for you, is there a way to leave out the sweetener altogether? Could I just add more oil to keep the consistency or what would your recommendation be? Thanks in advance! Amy

      Hi Amy, unfortunately, I don’t think it will work if you leave out the sweetener altogether. But this recipe for Banana Walnut Brownies is similar and uses mainly bananas as a sweetener (plus some coconut sugar). I haven’t tried to leave out the coconut sugar but it might work well!
