- Easy to adapt: It’s easy to make these fluffy pancakes gluten-free, dairy-free and vegan. You can also have lots of fun with different toppings.
- Make ahead: Delicious enjoyed straight away, but these mini pancakes can also be made ahead and reheated.
Ingredients
- Flour: You can make these pancakes with all-purpose flour or 1:1 gluten-free flour.
- Baking powder and salt: So that the pancakes rise and get nice and fluffy when they cook. Pinch of salt to balance the sweet flavor.
- Milk & vanilla extract: You can use dairy or plant based milk for this recipe.
- Agave syrup: I use agave syrup to naturally sweeten the pancakes. You can use maple syrup, honey or granulated sugar.
- Coconut oil: I use coconut oil to cook the pancakes.
How to make pancake cereal
- In a medium bowl, whisk together the flour and baking powder.
- Slowly, pour in the milk while constantly mixing the batter until it’s smooth. Stir in the agave syrup and mix until well combined.
- Transfer the batter into a squeeze bottle or piping bag.
- Heat 1 tablespoon coconut oil into a skillet over medium heat. Squeeze a small amount of the batter to the hot pan and form mini pancakes of your desired size. Once you start seeing bubbles on top, flip the pancake cereal over and cook on the other side.
- Transfer cooked mini pancakes to bowls. Top with your favorite toppings (strawberries, blueberries, raspberries, chocolate chips and a drizzle of agave syrup).
Can you make them ahead of time?
Pancakes are delicious served right away, and if you are making a big batch they can be kept warm in the oven on a low heat while you cook up the rest. Cooked mini pancakes can be stored in an airtight bag or airtight container and be kept in the fridge for up to 3 days.
The easiest way to reheat them is to place them on a lined baking sheet and heat them through in the oven at 360F.
Can you make them without a squeeze bottle?
A squeeze bottle is the easiest way to portion out these tiny pancakes. You can also use an icing bag, or a ziplock bag with the end snipped off. You can, of course, make regular sized pancakes with this recipe if you prefer. I have seen people also using a spoon.
How do you serve pancake cereal?
I like to serve these pancakes in a bowl and top with some fresh berries, bananas slices and a little agave syrup or a drizzle of maple syrup. I’ve seen tiktokers enjoying them like cereal, with milk poured over the top, or with some whipped cream, chocolate chips and sprinkles. You can even add nutella or a scoop of ice cream. There’s no rules when it comes to enjoying pancake cereal!

Recipe Notes and Tips
- You can make the pancake batter the night before and keep it covered in the fridge.
- Make sure that your skillet is heated before adding the pancake mix. It shouldn’t be too hot though or the outsides will burn.
- Make a test pancake first to make sure that your skillet is at the right temperature.
- Flip the pancakes when you start to see bubbles form on the top of the batter.
- You can also make pancake cereal with a store bought mix.
- If you don’t have a squeeze bottle or a piping bag, you can use a plastic bag (ziploc bag) with the bottom corner snipped off.
- You can also use a griddle instead of a skillet.
