Why you will love this recipe!
- Quick and easy: It takes no more than 10 minutes to make a batch of this salad using a few simple ingredients.
- Healthy: High in protein and low in saturated fat and sodium, this low-carb chicken salad is a great addition to a well-balanced diet.
- Make ahead: Make up a batch of this salad and enjoy it for easy-to-grab lunches throughout the week.
Chicken Salad Ingredients
- Chicken: Use cooked and diced chicken for this recipe. I like to use rotisserie chicken for ease, or you can quickly cook up a couple of chicken breasts in the oven and shred or dice those.
- Mayonnaise: For a rich and creamy texture. I prefer to use regular, but you can use low fat if you prefer.
- Vegetables: Celery ribs and green onion. Different variantions of this salad also suggest you serve it with tomato slices.
- Lemon juice: Use fresh rather than bottled juice for the best flavor. The lemon juice adds a nice zingy freshness.
- Mustard: Dijon mustard gives the chicken a nice mild tang. For a milder flavor, you can use yellow mustard or wholegrain.
- Almonds: Almonds and a great texture. I like to use sliced almonds rather than whole or slivered. You could also use chopped pecans, walnuts, or other nuts.
- Grapes: Sliced green grapes add a nice sweetness and work so well with the other tangy ingredients. You can use purple grapes if you prefer, or even dried cranberries.
- Dill: Fresh dill works great in this recipe, but you can use another fresh herb like parsley or cilantro.
How to make chicken salad
- Add all ingredients to a large bowl and mix everything together until well combined.
- Let it chill in the fridge until you’re ready to serve.
How long does it keep?
Cooked chicken will keep well in an airtight container in the refrigerator for up to 4 days, so depending on when you cooked your chicken, you can easily enjoy this throughout the week. Keep the chicken salad covered in the fridge to keep it fresh. Because this salad also contains mayo, it shouldn’t be left at room temperature for more than two hours.
Do you have to use mayonnaise?
Mayonnaise adds a great rich and creamy flavor and helps to blend everything together. If you don’t like mayo, you can make this recipe with sour cream or Greek yogurt, or a mixture of both.
Serving Suggestions
This easy chicken salad recipe is great to serve between two pieces of wholegrain bread for a filling and satisfying lunch. It’s also great to serve in croissants. For a lower-carb bite, serve it in lettuce wraps, or add it to some leafy greens for an easy salad option.
Add a side of broccoli salad (or your favorite side salad) and healthy chips.
