This salad makes a perfect summer salad – it’s wholesome, delicious, and filling! It is also easy to make and assemble and takes less than 30 minutes to prepare. It has become one of my favorite make-ahead lunches.
How To Make Cobb Salad
You might be wondering what is a Cobb salad and who invented it? It was created by Robert Cobb, the restaurant owner of Brown Derby in LA, who whipped it one night with leftovers. This delicious Californian salad has become one of the most popular salads on the menus of most American restaurants, and it’s now even a world-famous American dish.
Typically, for this salad, use chopped salad greens, tomato, avocado, crisp bacon, boiled, grilled, or roasted chicken breast, hard-boiled eggs, Roquefort cheese, and red-wine vinaigrette. Since Cobb salad has been around for so long, there are a lot of different versions. Some recipe variations use different dressings.
Best Dressing
The classic Cobb salad dressing is usually made with red wine vinegar but you can substitute it with white wine vinegar as I did in this recipe. I also added some honey as a sweetener. It’s delicious and light. There are a lot of variations of the dressing. But the main ingredients are oil, vinegar, mustard, sugar, salt, and pepper.
Can You Make This Salad Ahead
Yes, you can make this Cobb salad a day or two ahead. Don’t slice and add the avocado until you are ready to serve the salad. Also, keep the salad dressing in a jar in the fridge and add it just before serving.
Healthy Cobb Salad – Perfect for Meal Prep
This classic Cobb salad is naturally gluten-free, low carb, keto-friendly and I made it Paleo by omitting the cheese. It’s loaded up with delicious veggies, crunchy bacon, grilled chicken, and sweet and tangy dressing. I love making this salad in the summer because it’s fresh and loaded with tasty ingredients that leave you satisfied.
This healthy salad is also great for meal prep because you can prep everything a couple of days ahead of time and eat it for lunch during the week. I like to make a batch of cooked chicken, oven-baked bacon, and a dozen hard-boiled eggs on Sundays to meal prep for the week. This makes it very easy to eat healthy even if you don’t have a lot of time to cook during the workweek. If you are a fan of meal prepping, you should add this salad to your meal prep routine.

Ingredients
Cobb Salad
- 4 cups Romaine lettuce, chopped
- ½ cup cherry tomatoes, halved
- 1 avocado, sliced
- 6 oz boneless chicken breast, cooked and sliced
- 4 slices bacon, cooked and crumbled
- 4 oz crumbled Roquefort cheese, (omit for Paleo)
- 2 hard-boiled eggs, quartered
- chopped fresh chives, for garnish
Honey Dijon Vinaigrette
- ¼ cup olive oil
- 3 Tablespoon white wine vinegar
- 2 Tablespoon Dijon mustard
- 2 teaspoon honey, (use sugar alternative on low-carb diet)
- 1 teaspoon oregano
- salt and pepper, to taste
Instructions
Cobb Salad
- Arrange chopped lettuce in a salad bowl or a plate.
- Layer the chopped tomatoes, avocado, chicken, bacon, and hard-boiled eggs in rows.
- Sprinkle some fresh chopped chives and drizzle the Honey Dijon vinaigrette on top.
Honey Dijon Vinaigrette
- Combine all ingredients in a small bowl and whisk until well blended.
