Today, I am sharing with you a great Game Day recipe – one of my favorite finger foods to bring to a party. The Big Game is coming up soon, so if you are looking for a great homegating recipe to add to your table spread, this is it! These bacon wrapped apricots with jalapenos are sweet and very mildly spicy, delicious and everyone loves them, even my 2 year old niece. ๐Ÿ™‚  I have made these several times for family gatherings, holidays, parties and they are a big hit every time.

I always use Mezzetta’s jalapeno peppers for these bacon wrapped bites – these jalapeno peppers will make your dish a memorable one.

Ingredients

48 dried apricots

48 jalapeño slices

12 bacon slices, cut in four equal pieces – 48 pieces total (organic and pastured preferred)

48 toothpicks

How To Make Bacon Wrapped Apricots

Preheat oven to 400 F and line a baking sheet with aluminum foil and place a wire rack on top.

Cut the apricot horizontally, almost but not all the way through, and place one slice of jalapeño inside the apricot.Wrap the apricot in a piece of cut bacon, secure with a toothpick, and place on the wire rack. Repeat for remaining apricots.

Bake for 10 minutes. Flip the apricots and bake 10 more minutes, or until bacon is golden brown.

Enjoy!
